Here we are again on the last day of 2012.  The year flew by.  I think I say this every year.  You probably do too. This year we had to decide if we are going out to celebrate or if we would stay home, eat fois gras, oysters and drink champagne in front of a lovely fire in the fireplace. 3 dozen oysters

Fois GrasI usually prefer staying home.  Tonight we will celebrate with the oysters, champagne, and jambalaya grits out of Emeril Lagasse’s cook book, Every Day’s a Party

Here is the recipe:

1 Tbs olive oil

1 cup chopped yellow onions

½ cup chopped green bell peppers

½ cup chopped celery

1 ½ tsp salt

1/8 tsp freshly ground pepper

½ tsp cayenne

¼ pound andouille or other smoked sausage, cut crosswise into ¼-inch thick slices

¼ pound boiled ham, cut into small dice

1 Tbs chopped garlic

½ cup peeled, seeded and chopped vine-ripened tomato

6 cups milk

2 cups quick cooking white grits

½ pound medium size shrimp, peeled and deveined

¼ cup chopped green onions or scallions (green part only)

¼ pound sharp white cheddar, grated

All this cooking makes one hungry.  In France, one might start with a little bit of saucisse sec and a drop of wine. aperitif

veggiesIn a large, heavy pot, heat the olive oil, over medium heat.   Add the onions, bell pepper, celery, salt, pepper and cayenne.  Cook, stirring until the vegetables are soft and lightly golden, about 4 minutes. ingredientspot

Add the sausages and ham and continue to cook, stirring occasionally, for 2 minutes.  Add the garlic and tomato and cook for 2 more minutes.  Add the milk and bring to a boil.  Reduce the heat to medium and stir in the grits.  (We used polenta since we didn’t have any grits here in France.) with polenta Stir for 2 minutes and then add the shrimp.  DSC06067Cook, stirring until the grits are tender and creamy, 7-8 minutes.  Stir in the green onions, then add the cheese and sir until it is completely melted, about 30 seconds.  (We used Reblochon Cheese.)with cheese


As you can see, Macy is a big help in the kitchen.  “Clean up on aisle 1”.
